Cous Cous with Mushrooms and Adzuki Beans

1 tablespoon organic olive oil
1/2 cup thinly sliced organic carrots
1 diced organic onion
1/2 cup organic mushrooms (try swiss brown for an added flavour)
1 cup organic vegetable stock (add more if required)
2 cups cooked organic adzuki beans
1 cup cooked organic couscous
sea salt to taste
organic black pepper to taste

Saute the carrots, onions, and mushrooms for a few minutes in the olive oil - add salt and pepper.
Add stock, beans and couscous. Simmer over a low heat until liquid has absorbed.
Add vegetables of choice for added variety.
