Flourless Chocolate Cake
200g organic dark chocolate
125g organic butter
200g organic brown molasses sugar
100g almond meal
1 teaspoon Herbie's fragrant sweet spices
4 organic eggs, separated
Organic double cream
Preheat
over to 180C and grease a 7-inch springform tin. In a double saucepan,
melt chocolate and butter. Remove from heat and allow to cool.
Add
sugar, almond meal, sweet spice, egg yolks and combine. Whisk the egg
whites until soft peaks form, then gently fold into the chocolate
mixture.
Pour into tin and bake for 40 minutes. Serve with a dollop of organic cream.
